Breakfast Casserole + Secret ingredient!

Do you want a completely customizable meal prep breakfast item that you can make KETO or DAIRY FREE or GLUTEN FREE or VEGETARIAN??!!?? Well look no further I have one for you here!

For this amazing recipe you will need:

* EGGS

* HEAVY WHIPPING CREAM (or nut milk)

* BREAKFAST SAUSAGE (omit if vegetarian)

* VEGGIES (i.e. onions, peppers, broccoli, medley of green beans, corn, carrots, peas, stir-fry mix)

* CHEESE (I like 2-3 different kinds mixed together- Cheddar Mozzarella, Romano, Goat cheese, Feta cheese)

* BACON!! (omit if vegetarian)

RECIPE:

1. Brown the breakfast sausage on medium-high heat in a BIG POT

*TIP - use a POT instead of a pan so that you can add the other ingredients without overflowing it and making a big mess!

2. Oil/grease your 9 x 13 inch baking dish; I used coconut oil on a paper towel in this recipe. You can use a cooking spray too.

3. When the sausage is almost done browning, add the other vegetables. Here I first added the frozen diced onions and peppers and sauteed for 3-5 minutes.

4. Add the shredded cabbage and mix all the ingredients together. Cover with a lid for about 5 minutes until softened.

5. Preheat oven to 400 degrees Fahrenheit.

6. If you are cooking bacon on the same day, now is when you will cook it. (You can of course precook the bacon or do it first). Lay the bacon out on a baking sheet (I laid it on aluminum foil for easy clean up) and pop it in the oven while it's preheating. The bacon will basically be finished by the time the rest of the dish is done and assembled.

7. Dump the contents of the pot into the oiled baking dish.

8. Sprinkle a couple different types of cheese on top (I used mozzarella, cheddar and cubed romano).

9. Whisk together 14 eggs and a splash of heavy whipping cream (or nut milk).

10. Pour the egg mixture over top the other ingredients in the baking dish. Push the whisk into the mixture to make sure the eggs are incorporated and getting to the bottom of the dish.

11. Sprinkle more cheese on top and add the crumbled bacon (it should be almost done!)

12. Put the baking dish in your preheated oven at 400 degrees for 30 minutes.

13. Check after 30 minutes to see if it is still liquidy inside (stick a knife in it to see). It should be juicy but firm. The eggs will still cook a little after you remove it from the oven so don't overcook it in the oven.

14. Cool on the counter before storing in the fridge for up to a week!

15. BONUS: Top with your favorite sauce! I love Sriracha, Buffalo sauce or this awesome Cilantro Creme sauce from Costco.

I use this as a breakfast meal prep but you can double it and use for a crowd or for a big family!
