Meal Prep like a Boss!

You can save TIME and MONEY by meal prepping at the beginning of the week!

I hope these ideas inspire you to do your OWN meal prep with your favorite foods so you can save time (because you are spending only a small portion of your time in the kitchen) and $$$ (because you won't have to spend money on fast food).

Some of these I make every week and some are on a rotation. Let me know in the comments, what are your go-to favorites? How do you save time and money in the kitchen?

First up, we sliced up a chunk of Ham from Costco on our food slicer (get it here: https://amzn.to/30XpkuA). We put them in quart-sized bags and froze them, only taking one out at at time to put in the fridge. Make sure to date when you freeze AND when you put the bag into the fridge.

Next I browned a huge TEN POUND log of Ground Beef! I seasoned each batch differently (Breakfast Blend, Taco, Adobo, and Burger Blend) and divided into quart-sized bags to freeze. I kept a couple batches out to use this week. *Make sure to cool on the counter before freezing!

Next up is Pancakes! This was from a mix, but typically I batch package the dry mix and make our own from scratch. I cooked some for that morning, left some in the fridge and froze some in a gallon-sized plastic bag. Breakfast anytime is my favorite so I love to have pancakes on hand! After the pancakes, I started making the Egg Casserole. This is a VERY easy and customizable dish to prepare ahead of time. In this video I sauteed up some onions and garlic, then added some ground beef seasoned with a Breakfast Blend (or I use Pork Breakfast Sausage) and also some steamed broccoli. I poured this mixture into an 8 x 8 glass baking dish and covered with cheese. For the egg mixture I whisked about 12 eggs with 1/3 cup of heavy whipping cream (can you substitute milk or even a nut milk) and pour this on the cheese. I seasoned the eggs with salt and pepper and topped with more cheese. (Just be sure your bottom ingredients are covered with the egg mixture). I put in the preheated oven at 400 degrees Fahrenheit for 1 hour, checking after 45 minutes to see if it was cooked through. You can do this by sticking a knife in the center to see if the eggs are stilling liquid or not. Cool on the counter before storing in the fridge!

This next meal was a Green Soup I made in order to use up some ingredients I had in the fridge. In the Vitamix I blended: sauteed onions and garlic, steamed broccoli, raw spinach, Zero Food Waste chicken stock from my freezer (more on that coming soon!), ground flax, nutritional yeast, ham pieces from earlier in the video and salt/pepper to taste. I poured into pint-sized mason jars for quick on-the-go meals!

Lastly, I made Mason Jar Taco Salads - yum. I layered frozen corn, salsa, rice, spinach and romaine lettuce. I put the taco beef (from earlier in the video) in small containers I could heat up at work and then pour on top of the salad; with some extra cheese of course. You can add any ingredients you like (onions, jalapenos, sour cream, avocado... I like to put a small square of paper towel on top of the lettuce to absorb any moisture in the jar. These will last me 3-5 days in the fridge.
