EASY KETO SHEET PANCAKES | Sweet & Savory!

The recipe we used in this video is as follows:

WET ingredients:

1/4 cup butter (melted)

4 eggs

1 teaspoon vanilla extract

6 drops Liquid Stevia

2/3 cup sour cream

DRY ingredients:

2/3 cup Almond Flour

1/3 cup Coconut Flour

1/3 cup Monk Fruit pinch of salt

1/2 teaspoon Baking Powder

1 teaspoon cinnamon

Melt the butter in the microwave for 30 seconds. Mix all the wet ingredients together in 1 bowl. Mix all the dry ingredients together in another bowl. Pour the wet ingredients into the dry ingredients bowl and stir to combine. Spoon on to a cookie sheet to be about a half inch in thickness. Bake at 350 degrees for 25-35 minutes.

The best way to tell if they are done is to watch them! Check often after the first 20 minutes to see if the sides are browning yet. When they are, and a toothpick comes out clean (and they feel spongy to the touch), take it out!

In this video we made this recipe and divided it between 2 cookie sheets and it was pretty thin. I think the thin is great but sometimes want fluffy - in which case you will want to spread it on to only 1 cookie sheet and possibly double the batch to make the layer about a half inch thick. In the video it was about a quarter of an inch thick.

Cut into pieces and enjoy!

Ours do not last long in the fridge around here because we eat them up!
